1 small bitter gourd
1 ripe mango, peeled and diced
½ cucumber, thinly sliced
A handful of fresh cilantro, chopped
1 tbsp fresh lime juice
1 tsp honey
1 tbsp sesame oil or olive oil
A pinch of black salt (optional)
Prepare the Bitter Gourd
Slice the bitter gourd thinly, removing the seeds. To reduce bitterness, sprinkle with a pinch of salt and let it sit for about 10 minutes. Afterward, rinse well to remove excess salt and bitterness.Assemble the Salad
In a bowl, combine the bitter gourd, mango, cucumber, and cilantro.Dress the Salad
In a small bowl, whisk together the lime juice, honey, and sesame oil. Pour over the salad and toss to coat.
